Guacamole
Super simple guacamole with lots of garlic and lime juice. Make sure to use a mortar and pestle on this. It makes a huge difference.

This is just a mid-west version of pasta e fagioli (think Olive Garden). It's really fast to make and is hearty enough to be a meal on it's own.

Red lentils and lots of spices make this a great soup for early fall. Also, it doesn't hurt that it's so dang simple to make.

Whole Kalamata olives marinated simply in lemon juice and fresh chilies.

Tomato and Garlic Frittata
I make a lot of frittatas for some reason. They sound really fancy, but are in fact, quite easy to make. It's a great way to use up a bunch of ingredients.

Roasted Potatoes
This makes a quick side dish of simple roasted new potatoes with olive oil and parsley. Parboiling the potatoes first really makes the whole thing, so don't skip this step.

This is my favorite chili recipe. I like to experiment with different types of beans and I always add a bottle of good, strong American IPA for a great flavor.
