These easy pickled onions make a great condiment for tacos and sandwiches.

Guacamole
Super simple guacamole with lots of garlic and lime juice. Make sure to use a mortar and pestle on this. It makes a huge difference.

This is a classic slow cooker dish that is cheap, easy to make, and delicious.

Pasta & Bean Soup
This is just a mid-west version of pasta e fagioli (think Olive Garden). It's really fast to make and is hearty enough to be a meal on it's own.

Red Lentil Soup
Red lentils and lots of spices make this a great soup for early fall. Also, it doesn't hurt that it's so dang simple to make.

Whole Kalamata olives marinated simply in lemon juice and fresh chilies.
